Is it possible to change the status of a Field from Editable to non-Editable dynamically after the field has been displayed?

No, but this is possible when writing native palmOS apps.

One work around you might try is to create two fields, one on top of another. One field would be editable, the other not. Then just show/hide the two fields accordingly to have only one active at a time.
